A SAHM's journey through life with her 3 rug rats in tow. Friday, May 14, 2010. Crock Pot Challenge Day #6. Today was all about easy. I made sloppy Joe's in the crock pot. The meat turned out super tender and flavorful. I toasted the buns under the broiler before serving.yum! 1 lb of ground beef or turkey (I used turkey). 1 packet of Sloppy Joe Mix. 1 Can Tomato Paste (6 oz). 1 cup warm water. I thought I'd make a breakfast and serve it for dinner. I wanted something easy since this morning was busy so I made a Mexican Breakfast Casserole. It took me less than 5 minutes to throw this together so if you are in a rush, this would be perfect. 2 cups fat free milk. 2 cups shredded Mexican cheese blend. 1 can of green chilies, drained. Flank Steak with Apples, Feta, and Almonds.how can you go wrong? Flank Steak with Apples, Feta, and Almonds. 3 lbs of flank steak. 1/2 cup of honey. 1/2 cup of soy sauce (I used low sodium). 3/4 cup of crumbled feta cheese. 2 garlic cloves, chopped. 1 green apple, diced (I used granny smith). 1/3 cup raw almonds, chopped. So why not make Pecan-topped Sweet Potatoes. This recipe combines a lot of my favorite holiday flavors.candied sweet potatoes, cranberries, and pecans. It's like the holidays all rolled into one amazing dish. 4 sweet potatoes, peeled and cut into 1/4 inch slices (I used yams since that's what I had at the time). 4 tbs butter, cubed.

A SAHM's journey through life with her 3 rug rats in tow. Tuesday, May 11, 2010. Crock Pot Challenge Day #3. We eat a lot of chicken around here since I know both kids will eat it. Tonight I made Cream Cheese Chicken in the crock pot. I served it over noodles with a spinach salad (with almonds, cucumber, tomatos and pears with poppy seed dressing) on the side. This recipe is super easy and quick and is great for days when you don't have much time to prepare a meal. 2 tbs Italian Seasoning.
