MICKS BRICK OVEN PAGE. My first oven had a diameter of 42 The pictures on the right show the oven. Left, Hand made pasta is cooked in individual terracotta bowls after the fire is pushed to one side. The fire browns the top layer making the pasta crisp. Right, Roasting potatoes in a skillet, chicken and a small leg of lamb on a wire rack at 400F. This is my new oven being fired the diameter of this oven is almost 50 and takes about 21/2 to 3 hours to fire up. Vegetables ready to be roasted.

Here are a few pictures of my oven in various stages of reconstruction, I decided to make the oven a little larger, from 42 to 48 The extra few inches seems to make a big difference, I also improved on the chimney design a little, I think between the larger diameter and better chimney the oven seems to fire a lot better. MICKS BRICK OVEN PAGE. RECONSTRUCTION OF MY PARENTS OVEN. Since my parents built their oven over 20 years ago it has had a lot of use and hence some wear and tear. Here are a few pictures of their oven being reconstructed, the retaining walls were kept in place while the dome and chimney were torn down. The hearth was also replaced. The new hearth is set in place dry, no mortar was used and the first row of fire bricks for the dome are mocked up. Working on the dome and door to the oven.

My parents oven back home in Australia is a little over 4' in diameter after the oven has been fired and raked clean of coals they bake two batches of pizza before the bread goes in. On this page I have posted some pictures of my parents baking pizza. These pictures are snapshots taken from a video . unfortunately the quality is poor. Right, dough is proofing. The oven is fired.
