My father’s side of the family was not overweight in Mexico, but the American lifestyle may have led to diabetes and heart disease. Family gatherings in Mexico always revolved around food and family. On the one hand, nutrition-related disease is hereditary, and on the other, food and family are the purpose for gathering. Nutrition knowledge,… More Part III: Ahora Comprendo. My journey in research, teaching and learning. March 5, 2015. March 5, 2015. Being in a doctoral program is a lifestyle. Not a day goes by when you feel like you are not doing enough. There are not enough hours in the day for all the things you need to do. Nothing feels finished. Everything is a work in progress. These are the thoughts I have had over the last several months with relation to “school.”. And then, one day, all of a sudden, I realized several things were complete! What grad school is like.

My journey in research, teaching and learning. March 24, 2015. I was really excited when I saw that the Food and Nutrition Magazine of the Academy had an article on how to make tortillas. I thought they were finally going to teach me how to make corn tortillas like my grandmother’s from scratch using ingredients I can find in US. No such luck, but now I know how to make flour tortillas. I can finally do something my own mother cannot! Revisiting Sample Questions for the Dietetic Internship. Post was not ...

Live Love. Run. It's what I do. I ran at the Drake Relays yesterday in the 4×8 and it was amazing! The whole experience was incredible, with so much competition between so many talented athletes all weekend. Thursday afternoon my friend ran the 3000m and ran a great race, despite what she thinks. I am so proud of her! Jenny Simpson won in 4:03, and broke the Drake record. If only I could be that fast and make it look so effortless! 🙂 Our conversation went something like this:. Me: It’s mine! So basicall...

Live Love. Run. It's what I do. Laquo; Are you hydrated? Just give me a new song! Plantar Fasciitis = Plain Frustration. On May 8, 2013. Our conference meet was on this past Monday. I was supposed to run the 4x800m, open 800m, and the 4x400m. I ended up running the 4×800 and half of the open 800, hobbling and limping the second half of the open 800m, and finding a substitute for my 4x400m. Hopefully ice, advil, and prayer will at least get me through the next two weeks! May 9, 2013 at 11:47 am. I am at a...

Live Love. Run. It's what I do. Laquo; Plantar Fasciitis = Plain Frustration. Just give me a new song! On May 12, 2013. My track team has a few girls who like to sing. Occasionally we try to do an acapella thing while we run, like singing “Don’t Stop Believing” like they do on Glee, or songs from Pitch Perfect, or we sing “Thrift shop.” It’s slightly embarrassing, but kinda cool! Pretty much every day since the beginning of track. I cannot stand that song anymore! ThatPower by Will I Am with Justin Bieber.

My Quest for Yumdiood (Yummy Diet Food). One of My Favorite Breakfasts. English Muffin with Peanut Butter and a Nectarine. There are a couple of reasons this is absolutely one of my favorite breakfasts. First, it’s easy. Takes a couple minutes, looks pretty and it tastes great. Second, anyone who knows me knows I LOVE PEANUT BUTTER! Besides, never forget to get in a healthy amount of calories in the morning. Starving yourself early in the day just leads to disaster later on. August 2, 2010 Categories: Un...
