Friday in La Concha is special because the little restaurant next to the Bull Arena has a tradition of butchering a Cerdo (pig) and frying the thing up……including the much sought after “Pork Skins” which are deep fried in the back room in a bank of large wok looking iron pots fired by wood beneath and filling the entire building with the smoke and the smell of the Cerdo cooking. I am certain that anyone considering a trip to Nicaragua would be pleasantly surprised and relieved to have the Mariposa School as their “home base.” I can not imagine arriving in Managua, alone and without the awaiting school pickup!
