But, in my quest to find healthy, easy foods I kept coming across different variations of pasta salads. When my October 2011 issue of Parents. 1 Small Apple (cored and chopped). 1/2 Cucumber (seeded and chopped). 1/8tsp Ground Black Pepper. 1 Lemon (cut in half). 2 Add pasta, cucumber, raisins, olive oil, salt and pepper. 3 Stir until well combined.

Thursday, September 22, 2011. One of the snacks my kids like most comes in the shape of a bar. Oat-fruit bars and fruit filled grain bars tend to be their favorites. I am not opposed to having a couple boxes of these pre-packaged bars around to take along for a quick snack when we're out of the house, but would prefer not to give them while at home. Some time ago I found a great recipe online for oatmeal bars and since then have made many variations of the recipe for my kids and for my husband and I.

Baby spinach (a few handfuls). Cook and drain pasta. While you're waiting for the water to boil and/or cooking the pasta, dice the roma tomatoes into chunks- a little bigger than you would for salsa. Thinly slice/shred the baby spinach. Cut the string cheeses up into little cubes, about 1/2".

I have to confess, I am not even sure the pink Starbursts (in the traditional pack, I think there were red, orange, yellow, and pink in there, but they've got all kinds of themed packs/flavors now) are strawberry flavored? Maybe they were strawberry-lemonade? Whatever. Almost everyone I knew when I was a kid liked the pink ones best, followed closely by red, and wished they sold packs of JUST the pink ones. 1/2 - 3/4 cup water.

It's a great way to get more fresh fruits and vegetables into your system, especially when you add greens and make a Green Smoothie. Here's the 2nd green smoothie I made, and it was fantastic. The first one sucked. I used mustard greens. DON'T USE MUSTARD GREENS IN A SMOOTHIE EVER, EVER, EVER. 3 handfuls of green grapes. 2 big handfuls of baby spinach. About 1/2 cup vanilla greek yogurt.
