Go straight to blog. Approx 17 hours Bulk Proof. Mix and Knead Sponge. All times after the Bulk Proof are estimates -. 10mins 10mins 30mins 35mins. Sponge temperature: 21 C Dough temperature: 27 C. Yield: 2 ‘small’ loaves at approx 440grms each. Make up Sponge recipe, cover and leave for between 15 and 19 hrs: It’s very tolerant. Mix the dough ingredients with ALL the made up Sponge. Leave, covered, for 10mins then scale and hand up. Give an intermediate proof of another 10 minutes. Mix and Knead Dough.

Go straight to blog. Having spent effort getting the gluten strands in good condition, it should be used to help hold the structure of the loaf. The yeast will expand it during the bake but the gluten structure will then lock it -. Handing up and moulding are very much manual skills so I’ve recorded a video of the process rather than try to describe it. The dough is then cut into sizes, called ‘scaling’, and is rounded up with any air bubbles expelled. It then undergoes its Intermediate Proof, normally 10mins. Line shopping I’m sure there’s someone who’d love to pass the box on rather than take a trip to the tip. Especially if they receive a fresh loaf by way of ‘thank you’!
