A good kunafa has all the wrong ingredients, dough, butter, a lot of it, sugar, cheese, good for your appetite, wrong for your health. And some folks replace some of those ingredients with absolutely-wrong-for-all-the-reasons ingredients. Rice flour and cream feeling instead of cheese? 3 oz shredded phyllo dough.
