Quinoa Butternut Squash Salad. 1 butternut squash, peeled and diced. 1 red onion, peeled and diced. 1 Tablespoon olive oil. 2 cups vegetable broth (or water). 2 cups chopped spinach. 2/3 cup dried cranberries. 1 cup orange juice. 1/4 cup olive oil.
