A Journey Towards Plant-Based Living. After trying a number of veggie wraps at different restaurants, I decided to combine my favorite aspects of the different wrap at home. For one thing, wraps are super easy to make at home, and I can also vary the ingredients to keep it interesting! Here is one recommended combo (vegan) that I tried tonight. 1 whole wheat tortilla. Chopped romaine and baby spinach (both organic). Chopped roma tomato (one small tomato). One handful of matchstick carrots. July 24, 2015.

A Journey Towards Plant-Based Living. A Few Misses…. 8211; they make a quick and easy dinner and a perfect light meal in the summer months. As for the misses, I tried tempeh for the first time over the weekend. I have to say, not much taste. It could have been the way it was prepared (it was on a grilled sandwich). Also, I wasn’t a huge fan of the texture. I love veggie burgers, which can have a somewhat similar texture, but so far, not a fan of tempeh. This entry was posted in Journey. August 4, 2015.

Apologies for being MIA… I’ve been enjoying the glorious fall weather – apple orchard, fall colors, lots of apples, the crisp fall air, and yardwork… not enjoying the yardwork, but necessary. 1 medium butternut squash, peeled and cubed. 2 carrots, peeled and sliced. 1 onion, diced. Minced garlic and fresh grated ginger (about 1 tsp or more if you like the flavor boost). 1 32 oz carton of veggie broth. Salt and pepper, to taste.
