Eating Sunlight | radicle

Cultivating food and garden education. August 29, 2016. August 29, 2016. June started properly with strawberries- more than we’ve ever had in our backyard. Not quite enough for jam but plenty to freeze for smoothies. Then came raspberry picking on Sauvie Island and the best raspberry jam ever- a favorite on goats milk ice cream! My nephew, Cedar, helped me plant these potatoes in muddy March, and they came out of the ground in early June. Still keeping well in this crate:. But in general, we are practica...

Cultivating food and garden education. Nettles: Vicious and Delicious. March 23, 2015. I used thick gardening gloves to pick just the top few leaves of the plants- and only got a few small stings that still feel a little bit like my hand fell asleep but not terribly painful. The stinging compounds are easily removed by quickly blanching the leaves in boiling water. Using kitchen tongs, I blanched small bunches at a time for about 10 seconds and placed the tender tips in a large bowl. Juice from 1/2 lemon.

Cultivating food and garden education. In Praise of Dirt. November 22, 2015. February 15, 2016. I’ve come to terms with the fact that my busy days only push me to write a new post as the seasons shift and change. This is my post for fall. While the majority of environmental educators celebrate and encourage the power of “getting our hands dirty” there is often an expectation that all kids should. At the end of most lessons I ask students to raise their hands if they did anything in class that made them f...

Cultivating food and garden education. Eating Our Way through the Oldest Story in the World. February 4, 2017. February 4, 2017. We read the Persian Cinderella and made Middle Eastern Hummus, the West African Cinderella and made Senegalese Pigeon Pea Salad, the Irish ‘Cinderlad’ (main character is a boy! We began each lesson by looking at a globe, discussing basic facts about the country (geography, climate, population, languages) and because this was at a very culturally diverse school I always asked wh...

The world as we have created it is a process of our thinking. It cannot be changed without changing our thinking. Albert Einstein. Math methods course: initial relfections. July 16, 2013. How many insects does a single bird eat in a year? How many pieces of kibble in my dog’s food bowl per meal?
