As soon as the barbecue came out of the crock pot, I started a corned beef, below. Pretty excited for that, too. Should be ready by dinner time. For lunch I heated up some left over chicken soup from the other night (loads of veggies, garlic, herbs, and chicken stock) and made mashed parnsips. What’s a parsnip, you ask? Not the freezer burned cardboard kind, but the warm and fluffy fruit covered kind. But a waffle maker is a specialty kitchen item, and always seemed a bit too fancy for my style. If freezer burned cardboard was good enough for me as a kid, it should suffice now, right? By the way, Van’s makes a great apple cinnamon gluten free cardboard variety! It was a good day.
