Making Gravlax (Lox) at Home. Bagel, Lox, Cream Cheese. I did not eat fresh salmon until I was an adult. It quickly became my favorite fish as well as the favorite of my fish hating youngest daughter. She was sold on it when we were in Seattle and she had salmon jerky. I love ice cream. I am almost addicted to it. But the true holy grail of frozen confections has got to be Gelato. Perhaps it is because Gelato is impossible to find in my town. Perhaps it is because the nearest purveyor of a good facsimile of Gelato is about 30 miles away. And its rarity here has make it even more desirable to me. Modern commercial Gyro providers did away with the real meat and substituted a ground fat-laden meat combination. This is what you usually get in today’s restaurants. It is not as tasty as the real thing and the quality varies a lot. Restaurants also often do not use Tzatziki.
