Oil, salt, pepper. In a large soup pan, add oil, onions, carrots, beets and mushrooms. Bring to a boil and cook until beets are crisp-tender. Add cabbage, pepper and cook until softened. Add tomatoes, lemon juice, celery, salt and pepper.
