Thursday, June 2, 2011. Our original inspiration for this was to do a play on a typically north American surf and turf, using the ever-popular beef and shrimp combo. One of our favorite dishes is barbacoa or pit braised meat. Usually wrapped in agave or banana leaves and flavored with avocado leaves this succulent dish cooks in the ground for several hours is totally worth the effort. 3 lbs beef short ribs. 3 dried Ancho chilies. 3 dried Guajillo chilies. 1 dried Chipotle chili. 1 cup of warm water.

Pork Birria and slasa EL CHIVITO. 2 lbs pork shoulder. 1 cup coarse salt. 1 cup cider vinegar. 2 whole, dried chili cascabel. 1 whole dried chili pasilla. 1 whole dried chili chipotle. 1 head garlic, cut in two. 2 tbsp whole black peppercorns. 1 handful coriander stems/roots. 2 onions, cut into 4. 2 carrots cut in 2. 3 branches of celery cut in 2. 2 roma tomatoes cut in half. 1 onion, finely diced. 2 branches of celery, finely diced. 1 chayote, peeled and cut into small cubes.

Using the left overs of our lamb shoulder we made a delicious quick dinner. 3/4 box whole wheat penne. 2 cups shredded, cooked lamb shoulder. 3 cups lamb stock (from braise). 1 small onion, diced. 2 cloves garlic, chopped. 2 cups cherry tomatoes halved. 2 cups sliced mushrooms. This is a recipe purely inspired by the beautiful local, seasonal vegetables that can be found at Jean-Talon and Atwater markets at this sunny time of year. Wild mushrooms, fresh corn, peppers, tomatoes and chilis! The summer time bounty is always fun to work with! 4 ears of fresh corn. 2 cups masa for tamales. 188; cup butter at room temperature. 188; cup lard.
