Friday, October 28, 2011. Would you like to know the secret to the perfect egg salad sandwich? I think I'm sensing a theme with my posts lately. Besides my 1970's plates and poor photography that is. Anyway, you know how egg salad from the deli is just super fluffy and yummy? Well, for one, they use extra yolks but the real secret to great egg salad, in my not so humble opinion, is butter. 8 hard boiled eggs, chilled. 1 tablespoon Dijon style mustard. 1/4 red onion, minced. 1/2 teaspoon of fresh dill.
