Monday, June 20, 2011. Yummy, yummy way to use up carrots and to get vegetables in at the very start of the day. I found this recipe in my Whole Living magazine back in April. After our first batch these became an instant favorite around here! 1/2 c whole wheat flour. 2 tbsp. wheat germ. 1 tsp baking powder. 1/2 tsp. baking soda. 1/8 tsp. salt. 1/3 c vegetable oil or applesauce. 3/4 c brown sugar. 2 c finely grated carrots (4-5 carrots). Teriyaki Chicken Salad Sandwiches. I found it over at Our Best Bites.

Recipe of the Week 3: Mexican Chicken Stuffed Shells. 4 c chicken breast, cooked and chopped. 1 can black beans, rinsed and drained. 6 green onions, diced. 1/2 each of red, green, yellow and orange bell peppers, diced. 3 (8 oz) pkg. cream cheese, softened, not melted. 2 cans diced tomatoes with chiles, don't drain. 1/4 - 1/2 c. chicken stock. 1 1/2 c. sharp cheddar cheese, shredded. 1 c picante sauce. 1-2 avocados, diced. 1 can diced black olives. Tuesday, May 18, 2010. Cool and Crunchy Chicken Tacos. Super messy Pampered Chef recipe. It was very tasty and we would love to try it again as soft shell tacos or as a wrap sandwich. 1 small head romaine lettuce. 1-2 limes, divided. 2 tsp ground cumin. 1/4 tsp. cayenne pepper. 3 c diced chicken. 1/4 tsp. salt. Recipe of the Week 13: Apricot Orange Scones. 1 3/4 - 2 c. flour. 1 1/2 tsp. baking powder. 1/2 tsp. baking soda. 1/4 c cold butter, diced. 1 tbsp. fresh orange zest. 3/4 c finely chopped dried apricots. 1/4 c sour cream. 3 tbsp. fresh orange juice. 1 tsp almond extract. 1/2 c powdered sugar. 1/2 tsp. almond extract (orange works too). 2-3 tsp. milk. 1 tsp butter, optional. This recipe originated from Land O' Lakes. They do come up with some pretty awesome recipes!
