Health, Nutrition, and Fitness. Mexican Collard Greens Soup. January 7, 2012. Suzi's Healthy Adventures. This soup is somewhat spicy. I added another cube of cilantro on top because I wanted a burst of cilantro flavor. 6 leaves or about 6 cups collard greens. 8211; 1 large yam or sweet potato. 6 cups Vegan beef broth. 15 oz can White Kidney beans. 1 tsp olive oil. Tsp Spicy Mexican blend spices (I used some avocado spice mix). 4 tsp or more chopped Cilantro (I used the frozen cubes). Bring to a boil.
