2015 King Valley Sylvaner. The fruit was picked at around 11′ Baume and the whole bunches pressed on top of freshly pressed Gewurztraminer. Marc, direct to seasoned French barriques. The pressings juice was lightly fined and then racked off heavy solids. The cloudy free run juice spontaneously fermented and went sugar dry in 14 days, peaking at a temperature of 23’C. No malo-lactic fermentation and no lees stirring. Early bottling in August. Ideal aperitif wine.

2015 Yarra Pinot Noir. This Yarra Pinot is blend from the Coombe Farm Vineyard (clones MV6, 114 and 15) and our own MV6 vineyard in Badger Creek. Both parcels picked in mid February and chilled before a 3 day cold soak. Destemmed to stainless steel open fermenters with an inclusion of around 20% whole bunches for an indigenous ferment. Pressed to 20% new and seasoned Puncheons and Hogsheads. Natural malo-lactic fermentation. Bottled in December under screw cap.

2016 Pinot Noir/ Gamay. A blend of Yarra Valley Pinot (68%) and King Valley Gamay (32%). The MV6, 114 and 115 Yarra Pinot had a 4 day cold soak and a 100% whole bunch fermentation as well as some carbonic maceration. King Valley Gamay also had a long cold soak but was mostly destemmed. Both the Pinot Noir and Gamay had indigenous ferments with minimal plunging and both had some barrel ferment inputs. Natural malo-lactic fermentation. No fining or filtration.
