Syrup from concentrate is generally made with 4 ounces of the flavor concentrate, 1 gallon of water and 5 POUNDS of sugar! Just thinking about that makes my blood sugar spike! Syrup from concentrate is generally made with 4 ounces of the flavor concentrate, 1 gallon of water and 5 POUNDS of sugar! Just thinking about that makes my blood sugar spike! We have been experimenting with making syrups out of fruit and a much lower concentration of sugar the simple syrup we are using is about 3 parts water to 1 part sugar.

Spring finally decided to show herself on Easter Sunday and to celebrate the day we invited our friends over for a yummy Hawaiian plate lunch dinner and then we put Earnie (that is what we named our machine) to work making shave ice!
