The kids loved seeing the elk. We returned to Estes Park almost to the day 9 years after spending our honeymoon there. This time we had Aaron's family and four kids with us though. We have been trying to eat a bit healthier at our house recently and wanted to post some of our recent favorite {healthy} snacks! First off, I need to share with you what I have for breakfast almost EVERY morning. Oatmeal. The key to the perfect bowl of oatmeal. in my opinion. is to not overcook the oats. For a heart healthy portion {my daily portion}. Bring 1.5 cups water/ a dash of salt to boil. Speaking of yogurt....

I stayed put all day yesterday due to some gross winter weather and began attacking. Areas of my house that needed a little organization! One that was at the top of my list was the pantry. After cleaning up the pantry, I saw this major problem lurking in the corner. I was having a serious problem. Grocery bags were spilling out of this bag and taking up SO much space.

I was able to finish my son's felt playhouse just in the nick of time- right before we headed home for Christmas break. It was quite the process but well worth it and am very happy with how it turned out! Unless you are new to all the crafty blogs. you have most likely seen this playhouse at Homemade by Jill. My friend and I loved hers so much we felt like we better not change it up too much :). That is so awesome!

And I must say (can't say this about ANY of my past projects) everything turned out perfectly! So for now, I am just enjoying my {Perfect} little guy but will hopefully get back to doing. Less perfect" projects here soon! Until then, enjoy this amazing recipe. I couldn't get enough of it! I made it twice within 3 days-perfect for any nursing or non nursing mother! Congratutlations ...
