Crème Caramel | thebutterchronicles
https://thebutterchronicles.wordpress.com/2015/05/04/creme-caramel-and-creme-renversee
Filling the empty nest with food. A friend and loyal reader of my blog asked me recently if I would write about an Escoffier dish she could actually make. That made me laugh, as after the 3-day ordeal of making. Not even a sauce in its own right), I’ve been questioning the sanity of spending days in the kitchen cooking something that doesn’t even get you an edible dish on your dinner plate! Even Julia Child skips. Escoffier does have a recipe for crème caramel, but he calls it crème moulée au Caramel (mo...

Filling the empty nest with food. Since I started my Escoffier project, I’ve been reacting with disbelief when Escoffier writes that a dish or sauce is simple. Yeah, right, I scoff. This is going to take me hours, produce a mountain of dirty dishes, and inexplicable ruin is around every corner. Brown stock is supposedly simple, as is mayonnaise and the crème caramel I made last week. Really? Sam Sifton, in last week’s New York Times recipe. Sam Sifton tries to assuage the fear he knows lurks in us home c...

Filling the empty nest with food. Many French dishes are named after people: famous people, people the chefs were in love with, people connected to a particular ingredient. And it’s fun to research the history of these named dishes. The term “. 8221; honors an army pharmacist from the mid-18th century. Antoine-Auguste Parmentier was a vocal supporter of the potato as a food that could be eaten by humans. Quelle surprise to the French! Adapted from Escoffier’s Le Guide Culinaire. Sauce Espagnole | thebutterchronicles

Filling the empty nest with food. Mother Sauce #3 is. This is a brown sauce, made with a brown roux, sautéed. Carrots and onions, thyme and bay leaf), a little tomato purée and beef stock. So, simple-sounding, isn’t it? Of course, as you all know by now, from my complaining about how complicated every recipe is, how many dishes I’ve been washing, and how long every recipe takes to make–that this sauce takes hours to simmer and to complete well. What did I expect, you ask? Or you could say: I told you so!
Pâté en Croûte | thebutterchronicles
https://thebutterchronicles.wordpress.com/2015/07/10/pate-en-croute
Filling the empty nest with food. Bastille Day has come and gone. We did celebrate, though, in true French fashion–by drinking wine and making a complicated dish involving many kinds of meat wrapped in a flaky, buttery crust and filled with aspic jelly. Accompanied by sharp Dijon mustard and cornichons. That will be your Pâté en Croûte. See here for Guidelines for assembling the pâté. Allons enfants de la patrie, le jour de gloire est arrivé . . . Travel the highways and byways with America's most active radioactive couple! Wednesday, May 01, 2013. RED CANYON, Utah—Someplace about halfway into our ride on the Thunder Mountain trail, perhaps our most favorite place to ride a bike, we had joked about how the skin thins and the body gets a little more fragile as the years wear on. A few miles down the trail I proved my point. If you've never ridden Thunder Mountain, you should. Stage of life is wonderful! Blood on the ground is never good. But there ...
