Monday, August 16, 2010. My baby had her first birthday this weekend. When I saw this watermelon cake on Betty Crocker I knew it was the one. Simple, colorful and cute! Adapted from Betty Crocker. 1 strawberry cake mix - eggs, water and oil as called for on box. 2 cubes butter - room temperature. 2 lbs powdered sugar. 1 tbsp - milk. Food coloring (gel food coloring will make dark and bold colors). 15 cups miniature chocolate chips. 2 Add 1 cup mini chocolate chips to batter. 4 Bake as directed on the box.

Tuesday, January 10, 2012. This is my mom's chicken enchilada recipe, one that we've been loving for decades. There's nothing fancy about it, but I think that's what makes it so great. It's creamy chicken goodness and our whole family loves it! Makes about 12 to 15 enchiladas. 2 cups cooked chicken - chopped. 2 cups sour cream. 1 can cream of chicken soup. 2 cups grated jack cheese. 2 cups grated cheddar cheese. 7 oz can chopped green chilies. 2 TB chopped onions (dry is great too). I hope you enjoy it!
