The vegetables, in segmented versions of their prior shapes, were segregated on the counter in steel bowls alongside a jar of ghee. And a plate of cubed paneer. Deftly, he lit both elements on the gas range. The flames shot up one after another and surrendered beneath an iron cooking bowl, a kadhai. When they crackle, it’s ready.
