Today's The Day I Cook. Monday, April 28, 2014. I'm sure that somewhere on the internet there is an "official" name for this cake. But I think we need to come up with our own version. Will you help me name this 2 ingredient "cake"? There is no baking involved and is one of the easiest cakes to make. It's light and delicate and will wow people when you tell them it's just cookies covered in whipped cream. Whip cream until stiff peaks form. Ice each cookie with cream, and form small stacks, 5-6 cookies high.

Today's The Day I Cook. Friday, May 24, 2013. 2/3 cup of water. 2 Tbsp quick cooking rolled oats. 1-2 tsp maple syrup, honey or brown sugar. 1 1/2 tsp flax. 2 Tbsp blueberries, cranberries or raisins (fresh, frozen or dried). Milk, cream or yogurt to serve with. Place water and quinoa in a small saucepan, bring to a boil and cover. Reduce to a simmer and cook for 10 minutes. Stir in oats (and dried fruit if using), cover and cook for another 5 minutes, until oats are tender. Top with milk, cream or yogurt.

Wednesday, August 8, 2012. 1/2 cup bouillon ( I like clam, but chicken works too). 8 large shrimp, peeled and deveined. 1/2 small zucchini, diced. 1/2 red pepper, diced. 1 tbsp balsamic vinegar. 1/2 tbsp olive oil. Squirt of lime juice. Boil the quinoa in the the chicken broth. Set aside to cool. Heat a fry pan, add lime juice and shrimp and cook until shrimp is pink and done. Mix vegetables, olive oil and vinegar with quinoa. Top with warm shrimp. Links to this post.

Eggs Baked in Avocado. 1 teaspoon cumin seed. 2 teaspoons olive oil. 1/2 large onion, chopped. 1 1/2 cup diced tomatoes. 1 clove garlic, sliced very thin. Pre-heat oven to 425. Lightly toast cumin until fragrant in an oven proof frying pan. Add olive oil, onion and garlic, cooking till soft. Add tomatoes and salt and let simmer for 5 minutes. Cut avocado in half, discard pit and peel. Crack an egg into each avocado, season with salt an pepper.

We've even made it as a wedding cake for friends. Topped with Incredible Chocolate Icing, it's the richest, moistest, most amazing cake I've ever tasted. 3 ounces unsweetened chocolate, melted. 1 cup cold mashed potatoes. 1 cup sour milk. 1 teaspoon baking powder. 1/2 teaspoon baking soda. Today's the Day I Lose! Tuesday, June 30, 2015. But the main reason is that I’m so very disappointed in my time. This was my slowest 5k yet. It seems that the more I train and the more I run, the slower I get. I have lots of excuses – lack of sleep, busy all morning volunteering before the race, poor breakfast choice, it was hot…. but really, they just come down to excuses.
