On the first day we pan seared the short ribs for 5 minutes on each side and then made the marinade to accompany it. The marinade started with a mirepoix, which is a combination of onions, carrots, and celery. We then put the ribs back in the oven and broiled them for 45 minutes, flipping them every 15 minutes. After this the meat should fall right off the bone and should be easily cut with a butter knife.

This included a lesson on how to butcher a full steer. His butchery used to be located in the west village, but recently moved out to New Jersey for a larger space. This is the steak with the sauce on top. It doesn’t look gorgeous and it isn’t a full dish, but it is one of our favorite things to eat in the world.
