Friday, May 22, 2015. Baba Ghannuj ( Roasted Eggplant Dip). This is the perfect dish to prepare with eggplants that are almost out of the door. Grilling the eggplant really takes this dish to the next level. 1 clove garlic, crushed. 1 teaspoon, salt. 188; cup Tahini, sesame seed paste. 188; cup lemon juice. Set oven to 375F. (or heat up grill). Wash eggplant and remove stem. Pierce with a fork 4-6 times. Place in baking dish. Bake for 45 minutes or until tender.( or grill until tender). Links to this post.

They also work well as a topping for a salad. 3 medium red onions. 1 Tablespoon olive oil. 1/2 cup balsamic vinegar. Preheat oven to 375 degrees F. Cut the onions in half, peel off the outer layer of skin and slice thinly. Toss in a medium-size baking dish with olive oil, balsamic vinegar, salt and pepper. Cover the dish tightly and bake for about 45 minutes, or until the onions are tender.
