Around middle Tennessee, just about every town has at least 1 “meat and three”. What’s a meat and three? Just about every meat and three I’ve gone to has some version of this cucumber and tomato salad on the menu during the summer. It’s a southern classic and for good reason. When cucumbers and tomatoes are in season, this salad is delicious and it’s simple to make. It’s a great make ahead salad for a cookout or potluck. A few things to note on this recipe:. 2 cups sliced cucumbers. Frac12; teaspoon salt.

A few things to note:. I used a medium sized onion and pulverized it in the food processor. I really didn’t want any chunks of onion floating in my sauce. Ketchup can be extremely salty so don’t add any more salt until it’s cooked down and you’ve tasted it. If you don’t have lemons, double up on the vinegar. Add liquid smoke to your taste. Everyone doesn’t like smoke in their sauce but I think it adds something. 1 clove garlic pressed. Frac12; onion, finely diced. Frac12; cup tomato sauce. August 25, 2014.

1 cup fresh or frozen raspberries. Sparkling water or seltzer. Bring water to a boil in a small sauce pan or in the microwave. Add sugar and stir until dissolved. Let cool completely. Juice lemons and set aside. Put raspberries in a food processor and blend into a puree. Pour raspberries into a mess strainer and strain out the seeds. Combine lemon juice, raspberry puree, and simple syrup. When ready to serve, add raspberry mixture to glass and add sparkling water to taste. Never Miss a Bite. July 24, 2014.
