My father had a couple (yes, not one) heart attacks, stroke and numerous other health issues due to heart disease. Writing One Chapter at a Time. Sunday, June 26, 2011. The bedroom is now complete and i love it. It feels very peaceful and i love it. Did i mention i love it? Monday, June 20, 2011. On Saturday we had Doug's first doc appointment and he did so good. AK kept on saying "he took his shot like a man." Haha. He did not cry at all and the doc said he is very healthy. He has gained two pounds since we got him so he is now up to 4 pounds. He is a growing boy! We are such proud parents. Wednesday, June 1, 2011.

A Healthier Burrito Bowl! 1 c quinoa, rinsed. 2 1/4 c. chicken or vegetable stock, divided. 1 lime, zest and juice (divided). 2 chicken breasts, cut into 1-in pieces. 1 tsp dried oregano. 1 1/2 tsp. ground cumin. 1 tsp chili powder. 1/2 tsp. paprika. 1 bell pepper, sliced lengthwise. 1 onion, sliced. 1 155-oz can black beans, drained. 1 jalapeño, finely diced. 1 c Monterey Jack, shredded. 1 avocado, sliced. Reduce heat, cover and let simmer until liquid is absorbed, about 15 minutes.
