Life is good, I'm feeling you. Tuesday, October 19, 2010. Last night I made the most delicious zucchini-potato frittata. I used the cast-iron skillet that my friends got me and it was perfect. Needed some salt and pepper but it was perfectly moist and the vegetables were cooked through just right. I was pretty happy with how it turned out. We are still trying to adopt and have filled out the first set of paper work for LDS family services. We find the process long and a little nerve wracking. We kindly ask any who knows someone in the hard position of giving up a child that we are very interested in making that decision a little easier. Please help us spread the word.
