Baked Pączki (Polish Doughnuts). 2 tsp instant yeast. 2/3 cup of milk (I use 2%), warmed. 3 Tbsp coconut oil, melted but not hot (you can use butter, or oil). 2 egg yolks, room temperature. Filling of choice (jam, preserves, lekvar), room temperature. In a mixing bowl, whisk together 1-1/2 cups of the flour with the sugar, salt, and yeast. Too long since I've had cornmeal mush. Mama used to make mush when I was growing up. I'm not sure if I remember liking it much when I was little, at least not since we had boxes of Coco Wheats in the house. Hmmm Chocolate vs. Cornmeal. No real contest there when your all of 8 years old. I'm guessing it wasn't until I got older that my palate expanded from chocolate, fried chicken, halupki, and chocolate cake that I began to appreciate the taste and the texture of mush. I pulled out the Log Cabin Cooking.

Makes 3 - 4 Large Loaves. 10 – 12 cups flour. 8 eggs, beaten. 1 cup sugar 1 Tbsp. 3 sticks oleo, softened. 2 packets of dry active yeast. Mix together 1 Tbsp sugar with yeast. Scald milk, mix 1 cup of milk with butter – stir until melted. Cool remaining cup of milk to lukewarm (about 120 degrees) and mix with yeast mixture. Stir remaining sugar and salt in milk and butter mixture. Mix yeast, milk, eggs, and raisins in with flour. Knead until dough is smooth and elastic. Divide dough into 5 equal portions.
