1/2 c Smart Balance oil. 1 c dark brown sugar. 15 c all-purpose flour. 1/4 to 1/2 t. freshly grated nutmeg. 1/2 t Baking soda. 1 t baking powder. 3/4 c ground flaxseed. 3/4 c chopped walnuts or pecans. 1 med zucchini, shredded. This tastes far better than it sounds, falling somewhere in the same ballpark with pumpkin bread and carrot cake. Variations on a Theme.
