Turkey Noodle Soup : Beginning Turkey Hunting

Gobble Good Turkey Casserole. 2 cups cooked, chopped turkey, light or dark meat (or mixed). 3 large celery stalks diced. 3 large carrots, peeled and diced. 2 garlic cloves, pressed. 4 cups chicken stock. 2 tablespoons vegetable oil in a large soup pot. Sauté vegetables in oil for 3 minutes. Add stock, turkey, and seasonings. Add salt and pepper to taste. Simmer on medium-low heat for about 30 minutes. Add noodles of your choice (we prefer frozen home-style egg noodles).

Gobble Good Turkey Casserole. 1 pound boned and skinned turkey cut 1/8 thick (max.) along grain (breast or tenderloins). 2 tablespoons non-iodized salt. 1/4 cup firmly packed brown sugar. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1 cups hot water. 1/2 cup of turkey or chicken broth (make with bouillon cube). 5 pieces of clove. Mix ingredients in glass bowl and allow them to cool in the refrigerator. Place cut turkey in large zip-lock bag, pour in the cooled brine, and seal.

Gobble Good Turkey Casserole. 2 cans of cream of chicken soup. 1 package of onion soup mix. 1 cup of uncooked white rice. 2 1/2 cups milk. 2 cups leftover, shredded turkey (approximate).
