Colter’s Creek Winery. Just another WordPress.com weblog. Moving into Winter…. Wrapping up the Late Harvest Riesling. Crush came to a close November 9th with the picking of our late-harvest Riesling. The sugar concentration came in to nearly 30 brix (where most grapes are picked between 21-25 brix). For the most part, our grapes were ripe and unaffected by the fluke, early October frost, which ended the ripening season in the Clearwater Valley a little early this year. There are several contributors to wine cloudiness: dead yeast (called the “lees”), grape pulp, proteins, polysaccharide hazes, or tiny crystals formed by precipitating salts. While these are all harmless to the consumer, they are relatively unsightly and usually removed from the wine prior to bottling.
