January 10, 2016. 15 lbs. chicken breasts or chicken breast filets. 1 tablespoon olive oil. 1 1/2 cups diced onion. 1 cup diced celery. 1 cup diced green bell pepper. 2 to 3 cloves of garlic, minced. 1 15 oz. can diced tomatoes with juice. 1 T Cajun spice mix. 1/4 teaspoon cayenne pepper. 1/4 teaspoon black pepper. Brown chicken in olive oil with black pepper. Remove chicken and cover it with foil. Add garlic and remaining spices and stir for another minute. January 5, 2016.
