Sunday, March 27, 2011. I bought this cookie cutter many many months ago and figured, with spring break giving me the extra time and all, now was the time to break it out! I iced outlined all the cookies with a light brown royal icing using the Wilton round tip #4. My biggest challenge right now is icing consistency, and I think I either should have used a smaller tip and/or a slightly thicker icing. Something to think about for next time. Saturday, August 6, 2011. For the last day of school. I baked a gazillion cookies and cupcakes. (Thanks, Lois, for helping me decorate the cupcakes! The theme was summer, so there were watermelon and beachball cookies, and cupcakes decorated to look like the beach, or with a flag in them. The idea was to sell them to raise money for the music program. I thought to sell by donation, but I think that maybe scared people off. I'd like to try this again.baking is fun! I was thinking that cauliflower soup (with crisp bacon bits sprinkled on top) would look stunning (and hopefully taste good too) in those red bowls, so when I snapped a photo, I thought it would be fun to play around with it in Picnik.com. Which is a pity, since they were all things I really wanted to bake! I found the recipes here. Check it out; it'll be worth your time! Cake, filling, and orange buttercream. I don't know if you can call this a 'version' of the original, since I did my best to imitate the whole thing! If mine tastes as good as the original looks, I'll be happy.

This is the BIGGEST cake I've ever made. Recipe from a work colleague and I'm making it for my team Extravaganza tomorrow. Mix the following until just combined:. Juice and grated rind of 4 lemons. 1-½ - 2 cups of flavourless oil e.g grapeseed - I used 1-½ C Rice Bran oil. 1-¾ cup plain unsweetened yoghurt. 4 cups self raising flour. Transfer to a greased 28-30cm tin and bake 160° C for 1-½ hours until springy to the touch. Cool before turning out. 250g cream cheese (not spreadable). 4 cup icing sugar.

Fiona's Chocolate Chip Cookies. These are the recipe of a former work colleague and those of us that have tried them say they're the best - chewy with big hunks of chocolate - scrummy :). 1 block kingsize energy chocolate (or a dark chocolate). 1 cup sugar 2 tsp baking powder. 4 Tbsp condensed milk (unsweetened preferably). 8 oz (200g) butter. Cream butter, sugar and condensed milk. Mix in flour etc (add a little more flour if too wet). Add chocolate chunks last and mix. Bake 12-15 mins at 350oF (180oC).

Baked Chicken and Pumpkin. 4 cloves garlic, finely chopped. 1 Tbsp coarsely ground coriander seeds (or 2 Tbsp ground coriander). Zest of 1 lemon. 16 skinned and boned chicken thighs. 1 kg peeled, seeded, diced (3cm cubes) pumpkin. 4 Tbsp olive oil. Salt and freshly ground black pepper. Preheat oven to 190oC. Sprinkle the garlic, coriander seeds, sultanas and zest evenly over the base of a large roasting pan. Place the chicken thighs, side by side on top. Place pumpkin pieces around them.
