The Kitchen Dunce: January 2012

http://thekitchendunce.blogspot.com/2012_01_01_archive.html

Monday, January 16, 2012. Every year in February, our junior high and high school choirs hold a pops concert and dessert auction. Anyone can donate a dessert to be auctioned off during the concert. I've seen some desserts go for hundreds of dollars . it's nuts. So today . one year later . I found myself again thinking about the dessert auction. It's in four weeks. What am I going to make? They turned out really yummy . so I think I have my dessert auction item. Maybe tomorrow I'll take Erin and M...For m...

Saturday, September 1, 2012. Peach Cobbler Cupcakes . Take 1. And that turned out wonderful . so Peach Cobbler was my next adventure. Up first . baking the peaches inside. Here's what I did . 3/8 cup light brown sugar. 3/8 cup white sugar. 2 large eggs, room temperature. Splash of peach syrup from canned peaches (if using canned peaches). 1 1/3 cup flour.

Sunday, October 28, 2012. My First . and Probably Last . Wedding Cake. A cousin was making cupcakes. Are you thinking what I thought? Am I not the cupcake queen? What was I doing making the cake? Why did I agree to all of this? Back to the story . Here's what I did . I started off by baking two 6-inch round and two 8-inch round red velvet cakes. I wanted to make each tier three layers. So then I leveled, cut, and assembled each tier. This cake was far from perfect . and it was a little stressful maki...

Sunday, March 18, 2012. Bailey's Irish Cream Cupcakes. Yesterday was St. Patrick's Day. I made the mistake of being in Chicago yesterday. If you've never had this experience, let me just say don't do it. It was CRAZY. I decided that I really hate drunk green people. Even though I was away from home, I still found time to make some special treats for the day. For the adults, I made these Bailey's Irish Cream Cupcakes. I got the recipe from TidyMom. And let me just say that they were absolutely amazing.

Monday, September 3, 2012. Peach Cobbler Cupcakes . Take 2. To recap . My friend, Leesa, asked me to make a Peach Cobbler cupcake. My two thoughts were to 1) bake the peaches inside the cupcake and 2) make a peach filling for the cupcakes. So I decided to try both thoughts. I already blogged about the the first kind. You can read about it here. So here's how I made the second Peach Cobbler Cupcake of the day . 1 1/3 cups flour. 1 teaspoon baking powder. 1 cup firmly packed brown sugar. Mix sugar, cornsta...

The Kitchen Dunce: French Toast Cupcakes

http://thekitchendunce.blogspot.com/2012/06/french-toast-cupcakes.html

Tuesday, June 5, 2012. So I've discovered that there's a world where cupcakes are acceptable for any meal. I used to think they were only good for desserts, snacks, and celebrations . but now I've discovered breakfast cupcakes. Now, I know what you're thinking. You're probably asking yourself, "Aren't these called muffins? The answer to that is, "No! They are really cupcakes that just taste like breakfast items. Earlier, I wrote about Blueberry Pancake Cupcakes. 1 package plain yellow cake mix. I don't r...

The Kitchen Dunce: April 2012

http://thekitchendunce.blogspot.com/2012_04_01_archive.html

Sunday, April 22, 2012. How to Make Pooh Bear Cupcakes. To make the Pooh heads, I started off with some Wilton fondant. I used the ready-made fondant because it's a lot more sturdy than my marshmallow fondant. I tinted a bunch of it yellow, rolled it out and, using a round fondant cutter, cut a bunch of circles. With my fingers, I shaped the circles into Pooh heads. Next, I used a piping tip to cut half circles from the sides of the circle cut-outs. To assemble the cupcakes, I just made a chocolate swirl...

Friday, May 25, 2012. I've mentioned before that my boys are really into music. They both are in band and choir, and they both play in the jazz band. The tough part right now is that one is in high school and the other is in junior high. I end up going to a lot of concerts each year. But that's okay because I enjoy hearing them play and sing. Ding ding ding ding! I have an idea! Here's how I made them. 1 cup butter, softened. 1 1/2 cups sugar. 3 1/3 cups flour. 1 teaspoon baking soda. 1 cup sour cream.

Monday, May 28, 2012. Chocolate and Peanut Butter. My son's 15th birthday was last month. Last year, I made him a guitar cake. So I asked him what he wanted this year. Instead of cake, he said he wanted peanut butter filled chocolate cupcakes . AND . his favorite chocolate fudge frosting. He truly is my boy . I LOVE chocolate and peanut butter too. I got the recipe for the filling from Lizzy at Your Cup of Cake. The recipe is very simple. 6 oz cream cheese. 1/2 cup creamy peanut butter. While they cooled...
