Spicy isaan minced pork salad. 1/2 cup of chicken stock. 2 cups minced pork (beef/chicken). 1/2 cup of sliced shallot. 1/2 cup of finely chopped fresh cilantro and spring onion. 1/4 cup of finely chopped fresh mint leaves. 3-5 tablespoons of freshly squeezed lime juice. 2-5 tablespoons of fish sauce. 2-4 tablespoons of roasted rice powder. 1-3 tablespoons of ground dried red chilli. 1-2 tablespoons of ground galanga ( or finely grated fresh galanga).
