Wednesday, 14 August 2013. Here is a recipe i use every week to make a batch of ordinary bread rolls. Nothing fancy, just very nice rolls you can use during the working week for sandwiches. Makes approximately 12 rolls. 475g of Strong White Flour. 2 Tablespoons of Butter (olive oil as replacements). Cheat's Christmas Ice-cream Bombe. 400g butter brioche loaf. 75g ready to eat dried apricots, chopped. 75g pistachios (or other nuts), chopped. 75g dark chocolate, finely chopped. Make double if you want enough to serve with sauce). 125g dark chocolate, roughly chopped. 1 tbsp light muscavado sugar. Cut the brioche into strips, reserving a large slice for the bottom of the bombe. Use these to line a deep pudding basin, approx 22cm diameter. Spread the chocolate mixture over it.

Tuesday, 11 September 2012. I made this as a tray bake, but it would also work well as a pudding served warm with custard. Ingredients (makes 24 squares). 189; tsp baking powder. 188; tsp salt. 2 medium eggs, lightly beaten. Juice & finely grated rind of 1 lemon. Sifted icing sugar to decorate. Preheat the oven to 170C/325F/GM 3, 10 mins before baking. Lightly oil and line a 20.5cm/8” square cake tin with greaseproof paper. Dust with icing sugar and cut in to squares. I found this recipe on Marriages' website, where incidentally, they make great flour for bread-making. Not that i can attest to that fact as i use. Flour, but they do have a good reputation.
