Let food be thy medicine. So what’s better than a nice hearty dahl on a chilling evening? One that doesn’t take forever to make! Let’s start out with the ingredients…. 1 medium onion chopped. 2 cloves of garlic, roughly chopped. 1 1/2 tsp turmeric. 1 tsp ground coriander. 1 tsp Ground Ginger or small knob of fresh peeled and minced. 250g dried red lentils, rinsed. 1 can coconut milk. You can adjust the spices to your taste. Some people prefer more cumin and less cinnamon, or more heat. It’s a very forgiving recipe so feel free to play! Adapted from my divine inspiration, Ina Garten. 3 tablespoons olive oil or bacon fat if you have it. 1 large onion, chopped. 3 carrots, diced into coins. 3 stalks celery, sliced. 3 cups butternut squash, diced small (1/2 inch cube). 3 cloves garlic, minced. 1 teaspoon dried thyme. 1 28 oz can whole tomatoes, crushed by hand. 4-6 cups (approx.) chicken stock. 1/8 teaspoon crushed red pepper flakes. Salt and pepper to taste.
