Fat of the Land: Winter Mushrooms

http://fat-of-the-land.blogspot.com/2011/11/winter-mushrooms.html

Thursday, November 17, 2011. It's not officially winter yet but we had a hard frost in Seattle the other morning and I-90 was closed at Snoqualmie Pass due to heavy snowfall. Most mushroom hunters figure, "Put a fork in the season. It's done.". Not so. This is the time of year to find cold-loving species such as hedgehogs and winter chanterelles (aka yellowfoot). Look for them in wet coastal woods where there's plenty of decay. Pictured above and left) and spreader hedgehogs. Recently I made two appetize...

Fat of the Land: Rock 'n' Roll

http://fat-of-the-land.blogspot.com/2015/07/rock-n-roll.html

Monday, July 6, 2015. Meanwhile, a free diver such as myself just has to hope he can find some crabs in between the scuba crowd and the bank anglers. New England has the Lobster Roll. Out here on the Left Coast, we have the Dungie Roll—unless you want to take advantage of an underutilized seafood and treat yourself to a Rock 'n' Roll. 3 large rock crabs, shelled. 4 soft French rolls or hot dog buns. 1 cup shredded lettuce. 1 thinly sliced tomato. 1/4 cup diced celery tops (the leafy parts). Buy The Mushr...

Fat of the Land: Bouillabaisse, Northwest-style

http://fat-of-the-land.blogspot.com/2015/05/bouillabaisse-northwest-style.html

Wednesday, May 20, 2015. Fish stews—bouillabaisse, cioppino. Bisque, fish head soup. And so on—are some of my favorite meals. Don't let the authenticity police scare you into passing on such hearty and satisfying fare. These dishes are meant to be simple, to let the ingredients speak for themselves, even when we gussy them up with pretension. Fer chrissakes. (The rascasse, also called a scorpionfish, is a Mediterranean species often used in bouillabaisse… in southern France. 1/2 onion, chopped. Cover fis...

Fat of the Land: Southern Morels

http://fat-of-the-land.blogspot.com/2015/04/southern-morels.html

Friday, April 24, 2015. The Southeast has intrigued me for a long time for its diversity of plants and fungi, a diversity I'd mostly read about in books. The habitat was so different from what I'm used to in the West. Along with members of the Mushroom Club of Georgia. And like the trees, the morels were different too. Depending on which taxonomy you're following, they carry the scientific name Morchella americana. Most people call them yellows. I don't see them very often in the Pacific Northwest, t...

Fat of the Land: Dandy Muffins and Bread

http://fat-of-the-land.blogspot.com/2008/04/dandy-muffins-and-bread.html

Friday, April 4, 2008. Dandy Muffins and Bread. 2 cups unbleached flour. 2 tsp baking powder. 1 cup dandelion petals. 1/4 cup canola oil. 1 1/2 cups milk. This recipe is based on one in Peter Gail's The Dandelion Celebration. Posted by Langdon Cook. This looks likes an easy and wonderful recipe. I'm going to try it! April 25, 2009 at 6:19 PM. This looks like a wonderful bread. If you are harvesting petals, do you use them in cooking without washing or rinsing them? April 28, 2009 at 2:08 PM. Tempted In T...

Cook, learn, eat, share. Newer posts →. Technique: Egg Pasta Dough. August 6, 2009. I have home-cured bacon. How can I not make a carbonara sauce? But first, I need some pasta to put it on. If you’ve never made egg pasta, it really isn’t as hard as you might think. It may not be as easy as Mario Batali. Makes it look on Iron Chef America, but it’s easy nonetheless. To roll out the dough, I generally use the Kitchen Aid pasta roller set. Work well, but you need to be able to clamp them to the table or cou...

Life is best lived. Trying to live deep and suck out all the marrow of life. Another Trip Around Our Sun. December 30, 2015. They always say time changes things, but you actually have to change them yourself. Trying to summarize the past year feels nearly impossible. 2015 started with my wife, Brianna, and I freshly married and living in our small house in Minneapolis. We were spending most of our free time with our band. Summer in San Telmo, BA. To say she’s precocious would be an understatement. The is...

Life is best lived. Trying to live deep and suck out all the marrow of life. The Not-So-Specifics →. January 1st, 2013. January 1, 2013. What is the feeling when you’re driving away from people, and they recede on the plain till you see their specks dispersing? It’s the too huge world vaulting us, and it’s good-bye. But we lean forward to the next crazy venture beneath the skies.”. I turn thirty this year. I will forever say goodbye to my twenties. I’m certainly as surprised as anyone to have reach...

Redux: A Tutorial on How To Build a Coke Can Stove for Hiking, Bushcraft and Camping. I was just looking over my Coke can camping stove tutorial and thought it might be a good time to post it again - it is such an easy stove to make, and lots of fun. Okay, following up on a post about emergency preparedness. I saw a pile of Fondu Fuel bottles containing denatured alcohol. Boiling water is obviously important when camping or hiking or during a power outage. With one you can make hot drinks, heat meals...

20 Minute Knife Sharpening Board Tutorial. This little project should take you about 20 minutes at most. Mors Kochanski recommends making one of these in his book 'Bushcraft' (of which I have a signed copy! I had all the ingredients needed in my basement: 600 grit wet and dry sandpaper, double-sided carpet tape, a scrap of wood for mounting the sandpaper, a cutting board (another scrap of wood), a pencil and a piece of paper. Then I carefully and evenly adhered the sandpaper roughly positioned over the w...

EXERCISE ACTIVITIES, IDEAS and TIPS. Fat Obese Overweight Lose It. Do we love and think about our body as well as we love and think about our family, home, work and car? Do we believe our body deserves full consideration and a loving protection plan? Taking our body for granted is simple because of its astonishing resilience and regenerative power. We may get lulled into an artificial logic of "nine lives" body protection, believing our bodily being will fix itself come what may. When the mouth watering ...

Fat of the Land

Friday, March 23, 2018. Beef Pho with Licorice Fern. Everyone at the Mekong Market on Rainier Avenue knew what I was up to. The proprietor, a small gentleman always on the move, paused long enough to grin at the two packages of beef bones in my basket and give me the thumbs up. They were a dollar a pound. Then he frowned when he saw the big bag of dried noodles—and quickly guided me by the elbow to a refrigerated aisle, where he pointed at the fresh rice stick noodles. I'm all for getting rid of the scum.
