Rapini and Sausage Pasta with Calcagno. On October 7, 2013 · Leave a Comment. Calcagno is a Sweet and herbaceous aged sheep milk cheese. It pairs well with crisp, dry red or white wine. It’s also delicious grated over pasta! 2 bunches of Rapini. 9 garlic cloves some minced some in larger pieces. 1lb of sausage, pork or lamb. 500g- 1 kg pasta, cooked and drained. 2 tbsp. EVVO. Coarsely grated Calcagno to taste (Parmigiano or Gull Pond would also work well in this recipe). White Wine and Lemon Fetish Soup.

We provide day care facilities on two sites in the Elham Valley near Canterbury for over 120 students, half of whom live locally in residential homes associated with the Trust.
