Blend together a couple of cloves of garlic (to taste, as ever); a couple of teaspoons each of ginger (fresh if you can get it), turmeric, and brown sugar; a couple of kaffir lime leaves if you have access to such a thing – otherwise a handful of finely chopped lemongrass might do the trick – and a red chilli.
