Eat Eating. Eater. Foodie Behind the Food. Pea & leek soup. When I was in Rome, I ate in a stunning place called Antico Arca, and for amuse-bouche I was served a pea soup. Incredible. Indeed my mouth was entertained. This is my attempt to re-create that dish. I am also Ukrainian, and we eat soup for breakfast. Ingredients: makes approximately 2 servings. 8 oz of fresh peas. 1-2 medium sized leeks, chopped (white and light green portion only). 1 onion, chopped. 2 garlic cloves, chopped.

Ever since Il Cantuccio was shut down in September 2013, I have had a yearning for a cantucci biscuit. They made their cantucci’s with the largest chunks of chocolates I have ever seen. Chocolate to dough ratio was 90%-10%. Illegal. They also had a biscotti variation which was perfectly baked and filled with almonds galore. This is my remake of those biscotti cookies. 1 cup of whole almonds.

Homemade granola is a tasty mid-day snack, great for traveling and perfect for a first breakfast. I usually have two. One healthy granola brekky. Then a croissant and coffee. I lead by example. 1 cup rolled oats. Hand full cup dried apricots, chopped. 1 tablespoon of honey. 2 teaspoons of vegetable/coconut oil.

You will never buy store bought ricotta again, unless you purchase from the little Italian market, Buon Italia, in Chelsea market.
