I searched and searched online for a recipe that had ingredients I had already had; besides the fresh carrots and cream cheese, I didn't really want to shop much. And it turned out more than fabulous! 2 cups GF All Purpose Flour (I used Namaste). 3 teasp baking powder. 1 3/4 teasp baking soda. 3/4 cup plus 2 tablespoons corn oil. 4 eggs slightly beaten.

Gluten Free Support Group - Star Valley, Wyoming. Thursday, December 16, 2010. This recipe is from Linda Linford. This is our family’s absolutely favorite treat at Christmas. Stir in: 2 tsp coconut flavoring. Combine: 2 cup sugar 1 cup oil. Add 1/2 tsp soda, 1/2 tsp baking powder. Add alternately: 3 cups flour. 1 cups buttermilk, add 1 cup coconut, 1 cup chopped nuts. Bake in 2 greased and floured pans at 325° for 75 minutes. I usually use small loaves and bake for 35 min. Gluten Free 101, Carol Fenster.

I suggest at least doubling the recipe because they are so good they won't last. If you triple the recipe you can use an entire (large) can of pumpkin puree. Gluten Free Soy Sauce [breaded] Chicken. 4 boneless chicken thighs. 6 tablespoons GF flour (I used Namaste All Purpose). 2 tablespoons soy sauce. 1/4 garlic powder (or just sprinkle on however much you like! All the veggies you want! Cut chicken into 1 inch strips (or however long you want them to be! Place in ziplock bag. Add flour and toss to coat. Combine soy sauce and garlic powder, then add to the bag. Shake well and refrigerate for 20-30 minutes. SO SIMPLE and so delicious!
