Chicken, rice, and broccoli casserole. 1-2 cups of chicken (I used the breast meat of a whole chicken). 1 can cream of chicken soup. 1 can cream of mushroom soup. 1 14-16 oz. package frozen broccoli, thawed. 1 small onion, chopped. 3 cups shredded cheddar, more or less to taste.
