January 18, 2015. Coffee roasting is easily done in the kitchen stove. Very little smoke develops unless the coffee is dark roasted, which means a core temperature of 225 C / 440 F when the beans go through the second crack. Light and medium roasted coffee may be roasted in a roasting tin. Spread the beans as one layer in the tin – you may roast a little more than half a pound every time. The tin is placed in a cold stove and the temperature set at 215 C / 420 F, preferably with circulating air.

May 13, 2014. I have just received my new American steel drum for coffee roasting. According to the metal craftsman I found on eBay, I may now roast batches up to five pounds of coffee at a time on my gas grill with a rotisserie. First test roast of 3.5 lbs green beans. The drum is filled with beans and the rotisserie turns the drum! As the core temperature reaches 440 F (225 C) the weaker second crack is heard. LA FINCA LA RUBIA. LA FINCA LA RUBIA. I følge «the metal craftsman» som har laget den skal den ha en kapasitet på inntil 5 pund kaffe. Jeg har bestemt meg for å prøve 1.5 kg i første omgang. Trommelen fylles med bønner og monteres med rotisseriet på grillen. Rotisseriet startes og trommelen med kaffebønner roterer! Etter at første popping har stilnet av kommer andre popping når bønnene er rundt 225 grader. LA FINCA LA RUBIA.

LA FINCA LA RUBIA. Mai 9, 2014. I dag kom endelig forsendelsen fra USA med 65 pund råkaffe. Og endelig kunne jeg brenne og smake på den nicaraguanske La Finca La Rubia! Denne kaffen er produsert på farmen La Finca La Rubia og er fair trade i beste forstand. La Finca er et lite paradis oppe i fjellene i det ellers fattige Nicaragua. Arbeiderne får anstendig lønn og alt overskudd av produksjonen brukes til å sponse leiropphold for fattige nicaraguanske ungdommer på farmen. Brent litt inn i andre popping.

Problemet med røykutvikling oppstår først ved mørkbrenning, det vil si når bønnene får en kjernetemperatur på 225 grader og går gjennom andre popping. Så lenge man holder seg til lys- og mellommørk brenning kan man fint gjøre dette i en langpanne. Når man sprer bønnene utover som ett lag i langpannen kan man brenne omtrent 300 gram kaffe om gangen. Sett pannen i kald ovn og still inn ovnen på varmluft 215 grader.

Etiopisk Yirgacheffe er kjent for sin intense blomsteraroma kombinert med en fyldig og fruktig sødme. Den sies også å ha undertoner av eksotiske krydder, med smak av pepper eller kanel. Etiopisk Yirgacheffe er en helt spesiell kaffe med fantastisk smak og aroma. For et par dager siden fikk jeg tak i en pose med Yirgacheffe råkaffe i en lokal kaffebutikk og nå har jeg både brent og drukket den.
