Thursday, August 4, 2016. Bok Choy is one of my favorite vegetables. To me it tastes like a mild celery. I use it in preparing stir fry, soups, and love the taste! Here is how I dehydrate Bok Choy. Cut it up in small pieces. Blanch it for 5-7 minutes. Then put it in the dehydrator until it is completely dry.
