Thursday, 4 October 2012. Self and Food Preservation Part II. Fer·men·ta·tion. The chemical breakdown of a substance by bacteria, yeasts, or other microorganisms. When you ferment things, you are often growing and nurturing bacterial cultures. I grew a sourdough yeast culture that needed to be fed flour and water to grow. Sourdough yeast made sourdough bread, which could become a little labor/money intensive if I didn't bake bread continuously. Fermentation is also the process by which pickles are made.
