After depositing son and beetle man on ferry it was back up the road to feed the pigs,. Put another coat of paint on the rear cross member. Helstegt gederyg med bouillon-kartofler. 1 gederyg (ca. 1 kg.). Alle grønsager skæres i skiver og kommes i et ildfast fad. Hønsefonden tilsættes og faddet bages i ovnen i ca. 1 time ved 180 C. Gederyggen brunes godt af og steges herefter i ovnen i ca. 30 min. ved 160 C med rosmarin, timian, peberkorn og salt. Gederyggen serveres med de varme boullion-kartofler til. Wassim Hallal, kok. Stegt gedekid på gasgrill. Gedebøffer med tomatsalat og kold basilikum-tomatsauce. Frikassé med gedekød og grønne asparges.

Der er ca. 12 registrerede malkegedeavlere i Danmark. Heraf er hovedparten økologer, og de har tilsammen et par tusinde dyr. De fleste geder i Danmark er af “Blandet dansk landrace”. Som slagtedyr (til fersk konsum) anvender man næsten udelukkende unge dyr, da det giver den bedste struktur og smag. Kød fra gedekid er saftigt og finfibret kød, der kan sammenlignes med kalvekød og vildt. Stegt gedekød er fedtfattigere end stegt kyllingekød uden skind. Mælken opbevares i køleanlæg fra stald til mejeri.

Brun bovstegen på alle sider. Kom timian, peberkorn, laurbærblade og rødvin ved og kog det ned til det er næsten væk, tilsæt herefter fonden. Kom bovstegen i en ovnfast beholder med låg og hæld saucen ved. Kom låg på og lad det stå i et par timer ved 160 C i ovnen. Imens hakkes persille, mynte og forårsløg fint. Langtids...
