Jen's Cup of Tea. Friday, June 24, 2011. Yesterday was a day where at the end of it I had to just sit down and laugh at myself. Generally I am a decent cook/baker. But every once in a while something goes wrong with my brain. God's way of keeping this baker humble? Needless to say I was not in top form yesterday. Jen's Cup of Tea. Monday, June 20, 2011. Salsa Sunday.on a Monday:). Here's another of my favourites! Great with tortilla chips, or on fish, chicken pork, beef, etc! Spicy Melon Salsa (it's not the spicy though). 1/2 of a medium cantaloupe, seeded, peeled and chopped (about 2 1/2 cups). 1- 8 oz can crushed pineapple, drained. 3/4 cup chopped red sweet pepper (1 medium). 1/4 cup thinly sliced green onion (2). 2 TB snipped fresh cilantro. 2 TB white whine vinegar or rice vinegar. 2 TB vegetable oil.

Great with tortilla chips or on grilled meat. 1- 15 oz can of black beans rinsed and drained. 1 1/2 cups chopped and seeded cucumber. 1/2 cup chopped tomato (1 medium). 1/2 cup sliced green onion. 1/4 cup lime juice. 1 TB fresh cilantro. 1 TB olive oil. 1/2 tsp ground cumin. 1/8 tsp cayenne pepper. They come right up to our patio and can often be seen sitting on the pair of wooden planter boxes in the garden outside our backdoor in the morning (see picture).
